Ingredients:

• 2tablespoons of Mild Curry Paste2.3kg Patak's  
• 500g chicken breast, cut into pieces  
• 1large onion, finely chopped  
• 1can (400g) of chopped tomatoes  
• 1teaspoon of curry powder  
• 200ml of coconut milk  
• Fresh cilantro for garnish  

Process: 

1. In a pan, cook the onion with the curry paste until soft.  
2. Add the chicken, making sure it's well coated with the paste. Cook until golden brown.  
3. Add the chopped tomatoes and curry powder, simmer for 10 minutes.  
4. Add the coconut milk, simmer gently until the chicken is cooked.
